Ingredients
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh rosemary
8 tablespoons olive oil
4 tablespoons bread crumbs
4 1/2 pound leg of lamb
salt and pepper
Method
- Preheat the oven to 475F / 245C. Combine the thyme, oregano, parsley, and rosemary in a bowl, add the oil and bread crumbs, season with salt and pepper and mix well.
- Place the lamb in a large roasting pan, spread the herb mixture over it and roast for 15 minutes. Lower the temperature to 350F / 180C, add 2/3 cup of warm water to the roasting pan and roast for an additional 30 minutes.
- Remove the lamb from the pan, cover with aluminum foil and let rest for 10 minutes. Carve the meat and serve on a warm serving dish.
