Fragrant and tender, oven-roasted leg of lamb with a herb crust.

Ingredients

  • 2 tablespoons chopped fresh thyme

  • 2 tablespoons chopped fresh oregano

  • 2 tablespoons chopped fresh flat-leaf parsley

  • 2 tablespoons chopped fresh rosemary

  • 8 tablespoons olive oil

  • 4 tablespoons bread crumbs

  • 4 1/2 pound leg of lamb

  • salt and pepper

Method

  • Preheat the oven to 475F / 245C. Combine the thyme, oregano, parsley, and rosemary in a bowl, add the oil and bread crumbs, season with salt and pepper and mix well.
  • Place the lamb in a large roasting pan, spread the herb mixture over it and roast for 15 minutes. Lower the temperature to 350F / 180C, add 2/3 cup of warm water to the roasting pan and roast for an additional 30 minutes.
  • Remove the lamb from the pan, cover with aluminum foil and let rest for 10 minutes. Carve the meat and serve on a warm serving dish.
