Raspberry Semifreddo

Made with heavy whipping cream, eggs and sugar, a semifreddo (Italian: “half cold” or “half frozen”) is a semi frozen dessert with the texture of a frozen mousse. It is sometimes called the ice cream cake, because it’s usually served in thick slices, like a cake.

Make this stunning frozen dessert in advance for a dinner party. It is easily prepared and you don’t need an ice cram maker.

Make this stunning frozen dessert in advance for a dinner party.

Ingredients

  • 6 eggs

  • 1 1/4 cups superfine sugar

  • 1 1/2 cups fresh raspberries

  • 3 cups / 1 pint / 473 ml heavy whipping cream

Method

  • Whisk the eggs with the sugar in a heatproof bowl set over a pan of barely simmering water until thickened, then remove from the heat and continue whisking the mixture until completely cool.
  • Mash the raspberries in a shallow dish. Whip the cream until stiff and fold in the egg mixture and mashed raspberries.
  • Line an 8-inch x 4-inch loaf pan with plastic wrap, pour in the mixture, and smooth the surface. Put in the freezer overnight or for at least 4 hours. to serve unmold and remove the plastic wrap.
