Ingredients
4 lean boneless porch chops
4 cloves garlic, crushed
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon paprika
1 teaspoon each salt and fresh pepper
juice of 1/2 lime
1 teaspoon lime zest
Method
- Trim fat off pork. In a large, shallow dish, season pork with garlic, cumin, chili powder, paprika, salt, and pepper. Squeeze lime juice and zest from the lime and let it marinate for at least 20 minutes.
- To grill: Grill over medium-high heat for 4 – 5 minutes on each side.
- To fry: In a large pan heat up 1 – 2 tablespoons of olive oil and fry the pork chops over medium-high heat for 4 – 5 minutes on each side or until golden brown. Serve with cilantro rice.
