Marinated Mozzarella

Ingredients
250 g mozzarella
- For the marinade
8 tablespoons olive oil
2 tablespoons canola oil
1/2 teaspoon caraway
1 garlic clove, crushed with a garlic press
about 20 fresh basil leaves
1/2 teaspoon fresh oregano leaves, diced
the zest of 1 lemon
2 tablespoons lemon juice
salt to taste

fresh baguette or crispy, white bread
freshly ground black pepper.
Method
- Place all ingredients for the marinade in a bowl or a jar. Stir to combine.
- Pull apart the mozzarella into small chunks, add to the marinade and stir well. Cover the bowl or close the jar with a lid and let the mozzarella marinate for at least 3 hours or overnight.
- Serving suggestion: Slice up tomatoes and arrange them on a plate. Spread the marinated mozzarella on top of the tomato slices and drizzle with the marinade. Season with freshly ground pepper. Serve with a fresh baguette.
