Mozzarella, a bit different than usual: rich, flavorful, and aromatic.

Ingredients

  • 250 g mozzarella

  • For the marinade
  • 8 tablespoons olive oil

  • 2 tablespoons canola oil

  • 1/2 teaspoon caraway

  • 1 garlic clove, crushed with a garlic press

  • about 20 fresh basil leaves

  • 1/2 teaspoon fresh oregano leaves, diced

  • the zest of 1 lemon

  • 2 tablespoons lemon juice

  • salt to taste

  • Extras
  • tomatoes

  • fresh baguette or crispy, white bread

  • freshly ground black pepper.

Method

  • Place all ingredients for the marinade in a bowl or a jar. Stir to combine.
  • Pull apart the mozzarella into small chunks, add to the marinade and stir well. Cover the bowl or close the jar with a lid and let the mozzarella marinate for at least 3 hours or overnight.
  • Serving suggestion: Slice up tomatoes and arrange them on a plate. Spread the marinated mozzarella on top of the tomato slices and drizzle with the marinade. Season with freshly ground pepper. Serve with a fresh baguette.
