Herring Tartare on Pumpernickel

Ingredients

  • 3 scallions

  • 3 (about 200 g) Matjes Herring fillets

  • 60 g (about 1 or 2 depending on size) dill pickles

  • 1 apple

  • 1 tablespoon lemon juice

  • 1 1/2 tablespoons mayonnaise

  • salt and pepper

  • pumpernickel bread

Method

  • Rinse and pat dry the scallions, and cut the white and light green parts into fine slices. Finely dice the Matjes herring fillets and pickles. Peel, quarter, core and finely dice the apple. Add lemon juice, and mayonnaise. Spice with salt and pepper, and stir thoroughly to combine all ingredients. Keep refrigerated. If you intend to serve it immediately, leave it to refrigerate for 10 minutes.
  • Cut the black bread into circles with a ring mold, shape the tartare on the bread and serve the dish with fresh herbs.
