Chicken with Lemon (Pollo al Limone)

This is certainly one of the easiest and most inexpensive ways to prepare a chicken; all you need is a lemon, salt and a splash of olive oil.

The simple citrus seasoning results in a very juicy and light tasting meat. A perfect dish for a Summer dinner!

Ingredients

  • 1 chicken

  • 1 lemon

  • olive oil, for brushing

  • salt

Method

  • Preheat the oven to 350F / 175C. Put the lemon and a pinch of salt in the cavity of the chicken and sew up the opening.
  • Brush the bottom of a roasting pan with olive oil, place the chicken in it, brush it all over with olive oil and season with salt. Cover with a lid, and roast for 1 1/2 hours, until tender and cooked through.
  • Remove the string from the opening and take the lemon out. Cut the chicken into pieces and place on a warm serving plate.
