Method
- Preheat the oven to 350F / 175C. Put the lemon and a pinch of salt in the cavity of the chicken and sew up the opening.
- Brush the bottom of a roasting pan with olive oil, place the chicken in it, brush it all over with olive oil and season with salt. Cover with a lid, and roast for 1 1/2 hours, until tender and cooked through.
- Remove the string from the opening and take the lemon out. Cut the chicken into pieces and place on a warm serving plate.
