Blueberry Muffins

This easy blueberry muffins recipe makes eight generously-sized muffins bursting with fresh blueberries and topped with a crunchy, cinnamon-flavored sugar topping.

Ingredients

Batter
  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
Topping
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup cold butter, cubed
  • 1 1/2 teaspoon ground cinnamon

Method

  1. Preheat the oven to 400°F (200°C). Grease muffin cups or line with muffin liners.

  2. Prepare the batter: In a bowl combine flour, sugar, salt and baking powder. Add vegetable oil, milk and egg. Whisk the ingredients into a smooth batter. Gently fold in blueberries. Fill muffin cups right to the top.

  3. Prepare the topping: Combine sugar, flour, butter, and cinnamon by rubbing all ingredients through your fingers. Generously sprinkle the topping over muffins.

  4. Bake for 20 – 25 minutes in the preheated oven. Take out and let cool down completely.
