Beautiful and tender muffins, loaded with blueberries and crowned with a sweet and crunchy streusel.

Ingredients

  • Batter
  • 1 1/2 cups all-purpose flour

  • 3/4 cup sugar

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1/3 cup oil (vegetable, sunflower, or canola)

  • 1 egg

  • 1 cup milk

  • 1 cup fresh blueberries

  • Streusel
  • 1/2 cup sugar

  • 1/3 cup all-purpose flour

  • 1/4 cup cold butter, cubed

  • 1 1/2 teaspoon ground cinnamon

Method

  • Preheat the oven to 400F / 200C. Grease muffin pan or line with muffin liners.
  • Prepare the topping: Combine sugar, flour, butter, and cinnamon by rubbing all ingredients through your fingers until crumbly. Set aside.
  • Prepare the batter: In a large mixing bowl, combine flour, sugar, salt, and baking powder. Crack the egg into a 1 cup measuring cup, fill up with milk and add to the mixture. Finally, add the oil and whisk all the ingredients into a smooth batter. Gently fold in the blueberries.
  • Fill muffin cups right to the top and generously sprinkle with the cinnamon topping. Bake for 20 – 25 minutes. Take out and let cool down completely.
