Ingredients
- Batter
1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup oil (vegetable, sunflower, or canola)
1 egg
1 cup milk
1 cup fresh blueberries
- Streusel
1/2 cup sugar
1/3 cup all-purpose flour
1/4 cup cold butter, cubed
1 1/2 teaspoon ground cinnamon
Method
- Preheat the oven to 400F / 200C. Grease muffin pan or line with muffin liners.
- Prepare the topping: Combine sugar, flour, butter, and cinnamon by rubbing all ingredients through your fingers until crumbly. Set aside.
- Prepare the batter: In a large mixing bowl, combine flour, sugar, salt, and baking powder. Crack the egg into a 1 cup measuring cup, fill up with milk and add to the mixture. Finally, add the oil and whisk all the ingredients into a smooth batter. Gently fold in the blueberries.
- Fill muffin cups right to the top and generously sprinkle with the cinnamon topping. Bake for 20 – 25 minutes. Take out and let cool down completely.
