Blueberry Muffins

This easy blueberry muffins recipe makes eight generously-sized muffins bursting with fresh blueberries and topped with a crunchy, cinnamon-flavored sugar topping.

Blueberry Muffins

Ingredients

Batter
  • 1 1/2 cups of all-purpose flour
  • 3/4 cup of white sugar
  • 1/2 tsp of salt
  • 2 tsp of baking powder
  • 1/3 cup of vegetable oil
  • 1 egg
  • 1/3 cup of milk
  • 1 cup of fresh blueberries
Topping
  • 1/2 cup of white sugar
  • 1/3 cup of all-purpose flour
  • 1/4 cup of cold butter, cubed
  • 1 1/2 tsp of ground cinnamon

Method

  1. Preheat the oven to 400°F (200°C). Grease muffin cups or line with muffin liners.

  2. Prepare the batter: In a bowl combine flour, sugar, salt and baking powder. Measure 1/3 of a cup of vegetable oil and place it in a 1 cup measuring cup, add the egg and enough milk to fill up the cup. Combine this with the flour mixture. Gently fold in blueberries. Fill muffin cups right to the top.

  3. Prepare the topping: Combine sugar, flour, butter, and cinnamon by rubbing all ingredients through your fingers. Generously sprinkle the topping over muffins.

  4. Bake for 20 – 25 minutes in the preheated oven. Take out and let cool down completely.
