Gingerbread Cookies

I didn’t plan to bake any Christmas cookies this year since we are spending Christmas abroad, but my kids just wouldn’t stop talking about baking gingerbread and kids can be VERY persistent.

Gingerbread Cookies

  • Servings: ca. 60 cookies

Ingredients

Gingerbread dough
  • 100g of honey
  • 50g of cane sugar
  • 75g of butter
  • 1 teaspoon of Vanilla extract
  • 1 level teaspoonful of ground cinnamon
  • 1/2 teaspoon of ground cloves
  • 1 egg white
  • 250g of plain wheat flour
  • 2 level teaspoonfuls of baking powder
Egg wash
  • 1 egg yolk
  • 1 tablespoon of milk
Icing & decoration
  • confectioners’ sugar
  • lemon juice
  • sprinkle of your choice
  • food coloring

Method

  1. In a pot combine honey, sugar, and butter and warm up on low heat, stirring continuously until butter and sugar are melted. Pour the mixture into a mixing bowl and allow to completely cool down.

  2. Line a baking tray with parchment paper. Preheat the oven to 180°C / 350°F.

  3. Stir in vanilla extract, cinnamon, cloves, and egg white into the honey mixture. In a separate bowl combine flour and baking powder. Add about 2/3 of the flour into the mixture and mix with an electric hand mixer on medium speed. Transfer the still very sticky dough onto a flour dusted workspace, add the remaining flour and knead until the dough is smooth and elastic. If the dough is still too sticky add a little more flour. Roll out the dough about 1/2 cm thick, cut out the cookies using a cookie cutter with festive shapes and place on the prepared baking tray.

  4. Prepare the egg wash by whisking together egg yolk and milk. Brush the cookies with the egg wash, place the baking tray in the preheated oven and bake for about 10 minutes.

  5. Pull the baked gingerbread cookies with the parchment paper onto a cooling rack.

  6. Prepare the icing by mixing confectioners’ sugar with lemon juice. Your perfect icing will have a thick and creamy consistency. Decorate as desired.
