Matjes Herring Tartare

Ash Wednesday marks the end of all New Year’s and Carnival festivities, and the beginning of the 40 days long Lent. The word Carnival derives from Latin “carne vale” – meat, farewell! Religious people are fasting today and abstain from meat. Some people, like myself, use Lent to exercise self – discipline.  I’m giving up desserts, sweets, and sugar in general since that’s the biggest challenge for me. What would you give up for Lent?

Matjes Herring Tartare

  • Servings: 4-6

Ingredients

  • 3 scallions
  • 3 (about 200g) Matjes herring fillets (Matjes herring is a lightly salted Atlantic herring packed in oil)
  • 60g of dill pickles (1-2 pickles)
  • 1 apple
  • 1 tbsp of lemon juice
  • 1 1/2 tbsps of salad mayonnaise
  • salt
  • pepper

Preparation

  1. Clean the scallions and cut the white and light green parts into fine slices. Dice finely the Matjes herring fillets and pickles. Peel, quarter, core and finely dice the apple. Add lemon juice and mayonnaise, spice with salt and pepper and blend everything thoroughly. Keep refrigerated. If you intend to serve it immediately after preparing, leave it to refrigerate for 10 minutes. Serve on wholewheat bread or pumpernickel.
